Sounds like you don't have the correct rise or drop with your weight distribution hitch which is why you aren't level, and you don't need a brand new hitch, you can simply get a new shank. Unless you can get the bearing numbers and seal information from the manufacturer, there isn't a way to really find that information without removing the hubs. You don't have to dismantle them if you want to measure the spindle in a couple locations with a digital caliper like # PTW80157. I've attached a video of how to do this.

The reason your # 290-64844 seems a little big is because the measurement you took included the length added by the rear spare tire. The cover manufacturers recommend measuring the box length not including the coupler portion up front and the spare or ladder out back. The newer brackets aren't currently sold separately but I've run into your situation a few times and have just placed the inner bracket on the t-molding instead of on the wall of the slide out. You'll want to get the lower holes in the bracket as close to the edge of the t-molding as possible so that the screws sit in the space between the slide out box and trailer wall. You will need to use the Roadmaster Comfort Ride Leaf Spring Suspension Kit # RM-2460-2560 for your 2022 Winnebago Minnie 2529RG travel trailer. These leaf springs are rated for 5,000lb axles while the ones in the Kit # RM-2460-2580 you found are rated for 8,000lb axles. If you used the heavier springs your trailer would bounce a lot more and the suspension would not properly absorb the bumps.
